Jeff,
The UCA lifts don't change your travel at all, it just changes your ride height, so you get more up-travel and less down travel. In fact, with your stock UCAs you can crank your t-bars to get your 3" of lift (there's enough down travel in the stock setup to do that, you just can't get alignment within spec, that's what the new UCAs are for, they allow you align your front end with the added lift.
Hope that makes sense and helps you out...coincidentally I agree with Bodyman after seeing UCA lifts perform over the years and comparing them to an SAS rig (which seems to be your ultimate goal).

With aftermarket UCAs you do get a bit more travel, about a half inch. The angles they use for the UCA give you the same effect as adding a half-inch ball joint spacer. It's about all you can safely in the way of extra travel without destroying your outer CV joints.
Some folks use ultra-low profile bumpstops to get another 3/8 inch or so on top of what the lift UCAs give. I did that. It destroyed my CV joints, now I use "low profile" which are OEM-hight.

Disconnect them and toss them in the dumpster. with the stiffer t bars it handled very nice on the street without the swaybars.
those were the good ol days when i had body panels.lol

I hated loosing my sway bar back when my truck was my daily driver, but I learned to live without it. It made my usual high-speed runs up and down canyons into something like an amusement park ride, especially for the passengers.
All in all without the sway bar my canyon speeds dropped 5-10mph, but what I like about high speed canyon driving is the challenge of keeping it right on the edge of being in control. Without a swaybar you just get to that point a few mph lower.
In terms of offroad performance, there's definitely a noticible gain by removing the sway bar.
